用料:
猪肉馅600g、鸡蛋2个、肉馅1个、备用淀粉50g~75g、白糖10g、十三香7g、盐10g~15g、蚝油15g~25g、老抽或海鲜酱油3勺、大葱50g~100g、料酒2勺、味精适量、姜(可以不放,要放的话切的越细越好)、干豆腐500g(也就是千张或者豆腐皮,叫法有很多种)

做法:
1、肉馅放入鸡蛋,大葱;

2、接着放入十三香,白糖,料酒,这样的勺子2勺,老抽3勺;

3、所有的调味品全部都放进去,用筷子一个方向搅上劲;

4、如果干豆腐特别薄的用两张卷,中间刷蛋液。如果干豆腐厚的话一张就可以卷肉馅了;

5、这是一张干豆腐的;

6、铺满肉馅,上端刷蛋液,上蒸锅时起粘合剂作用;

7、这是两张干豆腐的,从底下往上卷,肉馅可以薄一些(不喜欢肉的可以用两张,熟的还快);

8、OK啦!这样的大小我的食材配方做了3个,上锅蒸15~20分钟,根据肉卷的大小而定;

9、开吃吧,有条件的话用糖熏一下子就更好了,但烟太大了,熏一次厨房得大扫除了,所以熏还是不熏,您根据自己的喜好决定哦;

准备食材
1块豆腐,80克猪肉末,30克咸鱼,1茶匙生姜末,2茶匙料酒,适量白胡椒粉,一小茶匙盐,1把葱
料汁
1汤匙耗油,1茶匙老抽,1汤匙玉米淀粉,少许盐和白胡椒粉。
具体步骤
1.咸鱼去皮,剁碎,和猪肉末、生姜末碗中拌匀。再加入料酒、盐和胡椒粉,拌匀。

2.豆腐切方块,每块豆腐上舀出1茶匙,来放咸鱼肉末。

3.舀一勺咸鱼肉末放在豆腐块的中间,放入锅中蒸十分钟左右,蒸熟。

4.蒸豆腐同时,玉米淀粉用水勾芡成浆,葱切葱花。豆腐蒸好后,小心取出盘子。

5.锅开火,倒水,放耗油和老抽,加点盐和白胡椒粉调味,倒入淀粉液,搅拌,煮至浓稠时关火,浇在豆腐上,撒上葱花。
